Quiche With Sweet Potato Crust

Being a working mother is tough! One night while looking through "kid-friendly vegetable recipes" I found this gem. But the problem is that I didn't have all the same ingredients that were listed in the recipe and then I had a lightbulb idea! I made my own quiche recipe with leftovers I had in the fridge. Fast-forward to the dinner table and all 3 of my picky-eaters scarfed the quiche down and asked for seconds. Working mom for the win!!!


Quiche with Sweet Potato Crust


Ingredients

  • 1 cup cheese-blend of your choice (cheddar, feta, goat, whatever is in your fridge!)

  • 5 eggs

  • 1 onion - minced

  • 2 large sweet potatoes, peeled and finely grated

  • 1 teaspoon chili powder

  • 1 teaspoon paprika

  • 1 tablespoon chicken broth

  • 1 teaspoon salt

  • 1 teaspoon pepper

  • Meat of your choice: 1 ounce of prosciutto, or bacon, or ham, finely chopped

  • Veggie of your choice: 3-4 chopped mushrooms, or 1/2 broccoli or 1/2 cup wilted spinach

Directions

  1. Preheat oven to to 350°F

  2. Press grated sweet potatoes firmly onto a pie tin. You can choose to bake the crust separately for 10 minutes for a crispier crust if you prefer

  3. In a mixing bowl, whisk eggs and spices.

  4. Place onions and veggies and meats and cheeses onto crust

  5. Pour egg mixture on top of crust

  6. Add cheese and make sure mixture is combined well with solid ingredients

  7. Place pie tin on the center rack of your oven and bake for 50-55minutes until ready!

  8. Let it cool for a few minutes, then cut into triangles! Bon appetit!
